We need to upgrade Nextcloud from version 28 to version 29 on a new virtual machine because the current one does not have LVM set up, and the storage of the main file system needs to be flexibly expandable.
The migration to the new virtual machine using a file storage backup and a database backup has been successful so far. However, while configuring the new cloud, we also wanted to set up a performance-stable Collabora Online. Unfortunately, I am struggling with the instructions and keep encountering an error. I am unclear on how to get Collabora Online functioning properly. When I enter the Collabora URL after adding the Collabora Apache config using the Apache reverse proxy module pointing to Collabora port 9980, I do not reach an accessible web server.

Maybe provide some clarity in terms of connectivity - both system are more or less independent - both should be configured on their own in the reverse proxy and connectivity to them is (logically) independent from each other even in case the data flow through same network infrastructure and might be hosted behind the same reverse proxy.

like always I recommend to start with official docs the guide you linked shows native installation as well.
Depending on your requirements it could be sufficient to install both systems on the same hardware. I would logically separate both systems using either VMs, Docker or any other technology you are comfortable with. I’m using Docker and I don’t see any reason not to use it as long you remain in a small setup… if you grow you obviously need something more complex like Kubernetes or Openshift…
