I accidentally set the beta channel
and I have the following problems

By restoring from a recent backup (using whatever method you’re using to keep your Nextcloud environment backed up).

Where would it back up to automatically?

Though some installation methods (you didn’t fill out the support template so no idea what you’re using), do have some rollback and backup options built-in (i.e. the Nextcloud Snap and Nextcloud AIO), which you can configure and use if you wish.

Otherwise, the backups are an administrative task. A basic approach for setting up backups is covered in the Admin Manual here.
