Summary of the issue you are facing:

I have Collabora (Nextcloud Office) installed through AIO and I am attempting to create a new template to print envelopes.

I found the Page Styles and Paper Format settings but none are the ones I need (EA5/6) for my envelopes. I wanted to create a new one but I can not seem to figure out how to do this.

One answer I found online was to “Right click the list of Page Styles and select New” but since this is through Nextcloud my right click is just the browser default.

I don’t understand your question.

You right click, select page style and then you can customize the margins under the page setting.

This… works fine on nextclouds built-in collabora server.

Yes, I am able to customize the margins under the page setting. But manually entering these every time I want to use the same specific size is tedious. What I’m asking is the ability to create my own Style or Format instead of selecting one that already exists then editing it.

The example would be the envelopes, where some of the existing ones are close to what I need, they are slightly off. So I’d like to make my own and save it to quickly select it later from that Page Style drop-down.
