Summary of the issue you are facing:
Nextcloud Office not working because it cannot connect to the Built-in Collabora server. It was working great before the update. I starte to see a lot of error in the log file.
Steps to replicate it (hint: details matter!):
- Update nextcloud to latest stable
- open an office document through the web browser
- failed with error 500

Tips for increasing the likelihood of a response
- Use the
preformatted textformatting option in the editor for all log entries and configuration output. - If screenshots are useful, feel free to include them.
- If possible, also include key error output in text form so it can be searched for.
