I want to disable automatic capitalization by the Writer Software.
All Support and Docs tell me to go to the Extra Section or at File to Settings
But you can see i have no extra or settings Section.

In general I can’t confirm all words are capitalized by default but in fact such function seems to exist:
give it a try…
just for reference same effect could be achieved after writing using this tool
As Nextcloud Office builds on Top of Collabora Online I would recommend to ask such specific questions in the Collabora Forum 
Update.: somehow I initially easily accessed the “Default Paragraph Style” from the manu as described above but on subsequent calls I end up on a different dialog. This is how to reliably access the Style dialog:
