Will nextcloud address the privacy threat of age verification implementation and move away from Debian/Ubuntu (which is implementing it) as base for it’s containers/VM? And also avoid SystemD which is also enabling it?

How did you install your Nextcloud? Can you please specify by sending the guide you followed for example?
It is simply the official community docker image.
Please don’t present your vague fears as facts. There is no privacy threat from Debian or systemd simply because it is now possible to optionally store a birth date via homectl (which Debian doesn’t even use by default).
If you want to use systemd-free distributions or Docker images out of principle, feel free to do so. However, from a technical or privacy perspective, there is currently no compelling reason to move away from Debian because of this.
If such functionality were ever enabled, it would most likely be implemented in conjunction with desktop environments via XDG portals, rather than on servers, minimal installations, or Docker images. And even then, it would most likely remain completely optional.
In other words, if you don’t provide a date of birth, the field will simply remain empty meaning there will be nothing to expose and therefore no privacy risk is associated with it.
Which is not AIO but a community image..
Well y’all answer the question for sure; Neither nextcloud nor the community understands privacy, i will be on my way to a different software entirely thank you!
Then please explain how a Docker image affects your privacy just because it’s based on Debian? I’m always happy to learn new things.
