We would like to view the log of who has changed config about external storage (for example host, share, remote subfolder, or domain) as picture below, Please kindly advise.

I’m not sure if config changes in the External Storage app are getting loged.
If you don’t see any messages regarding this in the Nextcloud log file you could try to change the log level too “Debug”, and/or you could setup the Admin Audit log which should give you a lot of additional information about various events.
If you still don’t see any relevant messages after doing this, either in the normal log or in the audit log, then probably none are generated.
