You could be bumping into this bug [Bug]: Automatic upload bandwidth hangs client · Issue #6349 · nextcloud/desktop · GitHub . The fix is easy and can be found in the thread. TL; DR: change the network speed settings in the desktop client app from auto to something else.

Have you tried tuning PHP and increasing the chunk size?
Are you using encryption on the destination?
