Please tell me, at the moment the server has version 27.1.5, what stable version can I upgrade to?

Unfortunately you have to go through all major upgrades and then always take the last release:
→ 28.0.14 → 29.0.16 → 30.0.12
Version 30 is still supported until September this year. Or you go already to NC31. Here is the release schedule:

Were you in a coma in a hospital?
I suspect it would be the fastest to backup all data and do a fresh install, then restore the backup.

You restore to the same version in general. Between version, the database structure gets some modifications/improvements.
You can safely upgrade from Nextcloud 27.1.5 to the latest stable release in the 27 or 28 series. As of now, Nextcloud 28 is the current stable major version. Check the Nextcloud admin updater or run the updater via the command line to see available upgrades. Always back up your data before upgrading.

You are right. But what i had in mind was to do a Calender and Contacts Backup in *.ics and *.vcf Format, do a Backup of all files in /media/Nextcloud-Data/var/nextcloud_data/<Users> and so on.
Do a fresh install of Nextcloud 31 and them import the datafiles, Calender and Contacts, etc. This might be much faster then update 27 → 28, 28 → 29, 29 → 30 and finally 30 → 31.
