Summary of the issue you are facing:
Have multiply other users using the latest version of Talk for macOS (and as well on iOS) who hasn’t have any problems getting Talk to connect to the server. Using Talk via the Nextcloud web interface work just fine; so there are no issue with access or login to the Nextcloud server; just that Talk client won’t login. Tried to uninnstall the Talk client and re-installing which doesn’t make any difference.
Steps to replicate it (hint: details matter!):

Open Nextcloud Talk desktop client on macOS

Enter Nextcloud server URL

Entering the userid (tried both email and username) and password.

Login screen shows: “Account access currently logged in as USER Name. You are about to grant User Name access to your Nextcloud account.”

Click Grant Access → the client appears to stall and does nothing.
Logs doesn’t show any errors for the specific users or any other indications to the login. So nothing of value to share.
