Where is the sync folder on Android and if I add / edit files in that folder will those files be sync’d back up to Nextcloud? If not, is it possible to setup a sync folder like that?

yes you should find an option in the app’s settings page (somewhere in the middle). In the launched auto upload view go to the top-right 3-dot menu and setup an local/remote folder pair. Beware that it’ll only sync additions and changes files. It won’t sync deletions!
