The issue you are facing:
Just after (re)installing my nextcloud instance on my debian 11 server, i could’nt access my pihole interface (which was working great before).
I know this is something related to apache and lighttpd having conflict / running on same ports.
But since i install pihole few weeks ago, i changed it straight away from port 80 to another port.
Today nextcloud is listening on port 80 & 443 and pihole on another port.
I don’t know where to start looking for.

With the ports is for your webserver. When you update/upgrade Nextcloud, this doesn’t change. Did you just put the code there again or did you change the webserver configuration as well?
Check your webserver logfiles, there is should be quite obvious when a port is already used.
All the port configuration is done in the webserver, it’s a setting of the webserver not Nextcloud. You can see which processes bind to which port with netstat -tulpen.
