My server hosts two different NC instances: one for my me, one for my father’s family. Despite the fact that I try to keep the configuration of both installations in-sync, I noticed a slight derivation in the icon theme between both instances after an upgrade to NC 30.0.1.
The instance for my father’s family started to look differently; in particular the icon for “sharing” changed to a symbol that looks like “add user”.
How did that happen and how can I revert it?

These are the correct icons, which were introduced with Nextcloud 30. So the question is, why is your instance still showing the old icons? Are you sure that both instances are actually on version 30.0.1?
Off-topic: I am not a fan of the new “sharing icon”. IMHO, the old icon with the three dots in the corner of a left-pointing triangle is the de-facto industry standard for “sharing”.
There is no actual standard, not even a de facto one.
The three-pointed, connected triangle is mainly used in Android and apps like Google Photos, Files and Maps. But not even Google is consistent, because in Drive they actually use a similar icon as Nextcloud, which was probably the template for Nextcloud:
