Ability to set up a PIN code for passwordless authentication to additionally secure your account should anybody obtain your security key.

I was searching in every corner of user and admin settings for this. Where (the hell) is the option/setting to use this?!?

I think you refer to the security key PIN. it’s not related to NC itself - all FIDO2 security key support a PIN to access keys - in Windows 10 you can set/change the key in Win Hello options
