I just updated NC11RC2 to NC11.0 and well after that I cant access anything, because after Login I will get a redirect loop. for some reason the index.php/apps/files/ always 302’s to itself…

I have the exact same issue. I have OwnCloud running on the server and no problems.
I just happened to solve the problem a few days ago. seemingly my update didnt run quite as clean as it should so I grabbed the nextcloud archive extraced it, and just overwrrote everything.
