Is there a way to change the default folder, for example, for the photos app? Is there a way to globally define this? For example, if I wanted everything to reside on an external drive (besides the installation)?
You cannot change the overall Nextcloud web structure but you can mount your external drive to any mount point you want, e.g. by using the files_external app.
