Hmm, science. LOL. I realized in testing that the pre-built VM I have from 3 weeks ago has a slightly different script with fewer options, such as no deSec or daily backup wizard (I did think those were new when I did the most recent one.) I canāt see how that would make a difference on whether the script would complete though. Still, thereās no point in trying to diagnose a failure on non-current code, so Iāll try to replicate what I did on the physical one and see what happens.
OK, letās clear up one major thing here.
There are two versions of the VM:

The Official VM doesnāt include any of the fancy scripts to setup TLS, apps or anything like that. Itās basically Nextcloud, nothing else.
The full version is the real deal with everything included.

Iām starting to think you got the official version, and not the full version.
The first time I got the Official version OVA, back when NC19 was the latest. The second time I got the Full version OVA on 4/15/21, the 40GB version of whatever was current then. The third time I used the script to install the Full version on 5/5/21 and that version has a few EXCELLENT things added to the script since whenever the OVA I downloaded was created.
