So I am dabbling with the Nextcloud Talk app but I was under the impression that it allowed for chat discussions and was not purely a video calling software. Based on my usage it appears I was wrong. Am I doing anything wrong?

Web supports chat. Mobile apps will eventually, once we improve the API and once the core experience (calling) is better than it currently is.
