Hello all, does anyone know of a way to have Nextcloud function as just a photo gallery, i.e. disable or hide all other features and have it load directly into the gallery?

You can use the gallery as your default app. you can try to disable all others except of a few, somthing like files you probably need to keep.
Use App Order from the AppStore to reorganize Gallery to the primary app and de-list the other apps. Under admin settings, you can also disable apps or restrict their use by group.
You could also experiment with creating a guest account that further limits the user to only the one application… or just share a particular folder via a shared url as read-only.
