Summary of the issue you are facing:

I would like to use the CrowdSec docker container to parse the apache logs to help protect my NC installation. Due to the AIO method it appears that the apache logs (from my looking around) isn’t available and therefore I can’t bind mount the log file for CrowdSec to parse.

Hi, yes indeed the apache container suppresses info and debug logs and only logs errors and warnings. One way to use crowsdsec with AIO is to use this community container: all-in-one/community-containers/npmplus at main · nextcloud/all-in-one · GitHub
