NCP - change backup date / time

Hi all,
is it possible to change time and date of when NextcloudPi is creating the data backup?
Because I backup my data to another server it takes several hours to complete, and I would prefer if the task would start and finish over night so I can use my Nextcloud at daytime.

If that is not possible, is it possible to exclude files in the backup?
