Seems very similar to my issue reported 2 weeks ago…

also started Issue Ticket at Setting/editing users e-mail address not working.. (Email address could not be changed!) seems to happen as of version upgrade 11.0.1 -> 11.0.2 · Issue #4370 · nextcloud/server · GitHub
found the “bug”… see my original post for infos !!
set your following config.php setting from “false” to “true”:
‘allow_user_to_change_display_name’ => true,
This allows again the name and e-mail to be changed !!
