Migrating AIO server - how to change from OnlyOffice to Collabora

Hi,

We are moving an original AIO install to a new server, restoring from a Borg Backup. Thinking of changing from OnlyOffice to Collabora…how should we do this? Can it be done down the track? Or has to be done during initial install?
