Hey, I was wondering if in regards to Nextcloud containers, the AIO or a custom Compose variant is better suited for use in the enterprise segment? Unfortunately, I haven’t found any information on this yet, but I have read promising things regarding the scalability and simplicity of Nextcloud AIO.

Not sure about the official Docker containers, but if you have more than a 100 users, and even more so if you have more than 500 users (Push Notifications - Nextcloud) you should consider an enterprise subscription:
It is actually possible to get an enterprise subscription for AIO. Then it is enterprise-ready.
