Is it possible to define additional custom fields in the calendar?
As far as I know this won’t be possible although the database itself should allow to store additional information, which is added by other applications.
CAlDAV itself does support custom properties:

I don’t know how Nextcloud handles such input or how Nextcloud allows to create such properties.
