How to turn off html-formatting when writing emails in mail-app by default

I’m looking for a way to turn off html-formatting by default when writing emails with the mail-app.

The multiple clicks required to do this for ONE email as of now are error-prone (and (to me) a liltle awkward and annoying.)
I could not find anything as administrator or in the user’s settings.
If there is no way to do it per user/email I can live with turning it off globally via config.php.

  • Web server and version (e.g, Apache 2.4.25):
    • apache2 2.4.65-1~deb12u1 amd64
  • PHP version (e.g, 8.3):
    • 8.2

I don’t have an answer, but would also be interested in how to accomplish this. e-mail should be plain-text by default. Most mailing-list will not accept (or publicly shame) the unfortunate user that posts with html-encoding enabled.
