The issue you are facing:

I’ve noticed on more recent versions of Files app, the left hand menu is not able to be hidden, which makes this unusable from most mobile browsers. On older versions of NC, this menu could be minimized using a left swipe gesture, or by clicking on the = burger menu icon that floated at the right side of the (mobile) browser screen.

I use the mobile apps, but some users need web access as well!

The same for me.

Nextcloud version: 20.0.6
Operating system: Ubuntu 20
Apache
PHP: 7.4.27

On mobile devices: Use of file app not possible. Menu is not hideable anymore.

It is a serious issue on the IU of NC 25. It’s solved in NC26.
