How do I add a valid domain?

I have a working server with a nextcloud in a subdirectory. All working well.

In /etc/apache2/sites-available/nextcloud.conf I have the entry:
ServerName my.dyndnsname.org

I want to change to a better domainname (spielmops.org), but want to use both parallel for some time. How do I add a ServerName?
