How do I actually set the enviroment variables?

I have no idea how to actually set the enviroment variables for Nextcloud AIO, i have tried changing the compose.yaml file, running it manually and i have read the info on how to mount folders on the github page about 30 times

Maybe post the Compose your trying to use and the exact sequence you’re using to run it.

The example has a bunch listed (which all work).

If you set them, make sure to remove the # in front.
