How can I restrict AI Assistant to parse some confidential files

I plan to use AI Assistant to perfrm some tasks such as translation, finding a pattern in a set of documents, writing so memo and send them by email… My question is regarding confidentiality of users’ documents which may be accessible to AI Assistant.Is ther a way to prevent Assistant to parse and use some documents whihc have been tagged for example?
