Summary of the issue you are facing:

I am hoping someone can help me set up a Push server (https://github.com/nextcloud/notify_push).

I have attempted to do this, and everything seems to go smoothly, Redis is good, etc, but what is causing issues (I think) is that my initial connection to my Nextcloud server is going through Caddy. So when I run the Push server through its self test/setup, it fails saying something about x-forward-for. I have set up the allowed proxies as it says to do, but still fails. Any help is appreciated.
