Custom themes now that is not possible to disable "theming"

Hi all,
I was looking have a single NC (27) installation accessible from different domains, and depending on the domain show a different custom theme.

Reading this

it seemed possible, in fact up to a certain point the custom themes (“theme” folder, with the custom themes copied from the template in the “themes/example” folder) worked.

But some property of the UI did not, because functions in “default.php” (used to override CSS properties of the de main theme) seems to be ignored.

From further reading seems to understand that this no longer work since “theming” became core and since is not possible to disable it anymore.

So my question is, is there any workaround to achieve what was possible before this change, this means for example to override some default colors as described in the legacy page of the manual
