If you share a file via email, is there the possibility of receiving a copy of the email sent? Some users are never sure whether the email was sent or not and a copy might be helpful.

I don’t think there is an option for that. The additional problem would be that it is still not possible to ensure that the e-mail arrives at all. Neither the one to the recipient nor the copy to yourself.
I don’t use the e-mail option. I always create normal links and send them by e-mail myself. In the end, there is no difference. The share is not linked to the e-mail at all. Anyone who knows the link can use it.
