Do you know how I can how I can configure a Syslog Server to which nextcloud logs can be send?

Do you mean not logging to disk at all?
If you don’t, then you should be able to log to local disk for instance /var/log/nextcloud/nextcloud.log and then send them from there to whatever you want to use?
Yeah I would like to know how I can log to another Syslog-Server, I just need to know where I can edit the option where I put in the Server IP Address of the Syslog-Server where the Logs can be send to.
If such an option exists, it would be configured in config.php. A list of parameters for it can be found here.
