I’ve been seeing very similar behaviour.
I’m running bare metal, openSUSE Tumbleweed with Apache.
It seems to have started around the time of 30.0.3, but there was a Collabora update around the same time, so difficult to tell.
I simply haven’t had the time to try and troubleshoot though.
I’ve disabled Nextcloud Office and Collabora for now. Just to stop the cURL errors from blowing up the logs.

Exactly the same for me! Run without issues for a year, after the 30.0.3 update and the Collabora update during that same time, issues started.
Now that we are three people that have this issue, I highly suspect a bug.
I will setup a separate CODE VM and report back if the issue persists.

go or no-go with 3rd party issues?
I could deep dive tomorrow since we're early on update schedule and upstream is struggling too. I've seen some mentions on https://help.nextcloud.com/t/collabora-curl-error-28-built-in-collabora-code-not-working/212567 but nothing definitive

@wwe do you know if this is known upstream?

I’m seeing the same problem but:
I have 2 nextcloud instances on the same Debian 12 server, both 30.0.4, with one Collabora stopped working with the same errors as above, the other seems to keep working although opening a docx or xlsx is very very slow …
I’m quite happy finding this thread, I’ve been trying everything I can to no avail. For the time being I replaced Nextcloud Office + Collabora with OnlyOffice + Document Server …
I am going off topic a little bit, but:
Is it possible to keep both up and running at the same time? That way I can choose to use the one that works when the other is not working.
Switching between them is not that difficult, just uninstall Collabora.
