The issue you are facing:
My question is: Is the calendar and contacts sync a two way street. Is there a way to see my ios calendar in NC? As it stands I can create an event on my ios device and if I use the NC ‘Personal’ calendar I can see it in NC web interface. However, I cant see my ios calendar in NC.

Contacts: If I create it in NC, I can see it in both places. I don’t see any of my ios contacts in NC
Is there a way to force a sync?

Is there a way to see my ios calendar in NC?

Nope. Only calendars created through the Nextcloud account can be synced.
You can export all of your events in iOS calendars and import them into Nextcloud calendars, however. Same goes for contacts.
