I’m still looking for a solution, but I’m starting to doubt that there is one, and most certainly not a simple one like some setting, because the issue doesn’t seem to be Nextcloud-specific, and probably not even Collabora-specific, but rather an upstream issue in Libre Office Online, on which Collabora is based on: 133977 – Cannot delete more than one character, or characters can get mixed up in Android Editor w AOSP keyboard
By the way, I tried a few alternative keyboards available on F-Droid and the following ones seem to work fine in Collabora:

I’m glad you isolated the problem but now you must look on the endpoint. or reach out to the keyboard app support 
I would check if there is a setting like “accidental touch” or maybe “sticky keys” preventing you from sending many identical key presses
once you find the root cause let us know
I think it’s a more fundamental problem, and I’ve tried different settings, which aren’t all that many in the AOSP keyboard provided by Graphene OS to begin with, and they make no difference.
Also, this is the only app I’ve encountered this problem with so far, although technically it’s not an app, as the Nextcloud Android app only shows a web view provided by the Collabora online server.
However, the same thing happens when I download the file and open it in the Collabora Android app, so I’d say it must have something to do with how LibreOffice/Collabora interprets the backspace keystrokes from AOSP-based keyboards.

it’s hard for me to believe specific keyboard app could brake things in CODE but obviously this is the case - I would definitely report the issue at AOSP and Collabora bug tracker so the devs could dig into the problem… it seems somewhat easy to nail once you know what is the problem
