Confusing - update channels

I am looking to do an upgrade from Admin UI.
This is a production environment, so I know I can safely ignore daily and beta.

But what is the difference between stable and production?

The production release channel is even more conservative and stability-oriented than the stable one:

And there is some discussion about it at the moment because it is not exactly clear when which version is in a specific channel:
