Sorry, it was setting php-fpm nextcloud pool to static.
Despite the modification, we had another php crash this morning.
Yes I also had a crash after deleting big folders 
It is way more stable, and nextcloud now uses 60% of memory usage (doesn’t have a plateau at 30% like before) but it’s not really enough to be sure server will not crash anymore…
