Nextcloud version (eg, 20.0.5): 20.0.3 (but I had the same trouble with previous versions)
Operating system and version : I don’t know, my hosting is with yourname.nl (Metaregistrar). They use Plesk as a user interface? Apache / nginx is mentioned
Apache or nginx version (eg, Apache 2.4.25): I searched everywhere in my Plesk-management window, but I didn’t find it.
PHP version (eg, 7.4): PHP 8.0.23

The issue you are facing:
The web-updated get stuck, now more then 10 times (I tried on different times of the day and with weeks/months between tries)

Steps to replicate it:

  1. Go to settings, click the web-updater
  2. Get stuck on a step (backup, download, deleting old files)
  3. Backup and download step I can solve by changing the .step files, but

I'm sorry, because my clients need the appointment app, I had to restore my data. So I don't have the logs anymore.
