Update NC from 20.0.8 to 21.0.1

I have two Nextcloud appliances in version 20.0.8 but one of them shows the notification to update to 20.0.9 and the other one shows the notification to update to 21.0.1.
How can I update both to NC 21.0.1?
They have different Apps installed, that could affect the compatibility to update?

The upgrade notification is only send to 1/3 of all users, so there is a slow rollout. There are other topics about that, the usual workaround is that you switch to the beta channel, then you always get the latest version and after the upgrade to NC 21, you switch back to stable.
