demo.nextcloud.com doesn’t work.
For me it works well. Where exactly and what exactly does not work? Some hint from browser, error message, maybe in browser terminal?
In between nice idea with the temporarily per user created nextcloud instance in the demo! This way you can really try everything with full admin control
