I would like to be able to just sync an external hard drive through my main computer. So any changes made to this external drive would also sync to my NC server. I can’t seem to find a good example of how to do this. Is this possible?

You can setup you external drive as a folder, in the next cloud client. And turn off the virtual file system for that folder.
Open the settings screen, add new folder connection and follow the steps. Also make sure you deselect the same folder for your main folder connection.

@sebastiank I thought of this, which may be a solution with Windows. However this is for my partner’s Mac. Which doesn’t have the ability to “free up space” 
Okay, that probably means that there is no virtual files support on Mac.
As for your original question, on a Mac, you can symlink the external drive to the nextcloud folder, which should automatically sync all the files to your NC.
