My installation scripts keep failing due to version numbers changing on downloads. If there was a “Nextcloud-Latest” build I could just point my scripts to that.

There is:

as well as with main version number (e.g. 16):
https://download.nextcloud.com/server/releases/latest-16.tar.bz2
Both links also work with .zip instead of .tar.gz
Also there are checksum and signature files available
*.(md5|sha256|sha512|asc)
