Restore old Profile in new Nextcloud AIO (external Drive)

Hello to all,
I have stupidly uninstalled my Nextcloud (Docker) without backups.
I have now reinstalled everything and remounted my external hard disk. It is displayed again and it even shows that there is still data available. I have created the same user 1 to 1, hoping to find all the data in the profile again, unfortunately without success.
How can I get the old data saved on the external hard disk back?
When I connect it to a Linux Mint PC, I have no access rights to it.

Is there a possible solution?
