Is there a way to setup a one-way sync? I would like to push a folder to NextCloud but only use the web interface in case I need to grab that latest version of the folder.

Syncthing software has the options Up Only, Down only and Both ways. This would be very useful to have in the Nextcloud client. And shows those options are considered important.
I’m sure this has been discussed up and down during last 4 years.
It’s a feature request… and I’m pretty sure it’s mentioned on Github as well.
