It should be possible to change the language used in the app without having to change the language used in the whole OS.

Why do you say this ?
Almost all of the app ios does not allow, although i can understand both comfortable … for example i use iPhone EN but i would like to some app in IT …
That’s exactly the problem :). Some people don’t mind having the OS in EN because the terms used are more familiar, but within certain apps, you really want to understand what is being asked and you need it in your language.
I’m mentioning it because people have run into the issue of not knowing how to change the language.
