I was syncing a Mac with nextcloud for the first time. I’ve paused it before finishing the sync and then paused it to continue the sync. Later I realized it has deleted many documents from my mac. It is not in the MAC bin or in the Nextcloud server bin. How can I recover the lost data? Is there any way to recover?

If you cannot find any file in a trash bin, the only way I know is to use your regular desktop backups you’re most likely creating.
