Is it safe to mount the same external storage across multiple accounts or servers?

I have a DigitalOcean space that I use on my office Nextcloud server, and would like to share the folders on it with my university Nextcloud account. I was wondering whether, instead of using a federated cloud share, it is safe—with respect to data integrity—to mount the same space on both servers.

It’s depends.

If your folder is with read permission only, their is no problem.
If it with write permission : what if two users from the two nextcloud instance try to change the same file ? (on a lonely nextcloud instance, the file_locking don’t allow the second user to change during another people read or edit it)
