The issue you are facing:
After the last automatic NC snap update I could no longer enter through web interface of any kind. It says ‘internal server error’
Still my system is in use through mobile app

The output of your Nextcloud log in Admin > Logging:

I had same problem!

In my case I found (systemctl status apache2.service)
PHP Fatal error: Uncaught OC\HintException: [0]: Memcache \OC\Memcache\Redis not available for distributed cache

and installed missing packet:
sudo apt install php7.4-redis

nextcloud web interface is up again! :wink:
